7000 Steps Northeast Coffee to All over India

At 7000 Steps Coffee, we are more than just a coffee company. We are  coffee lovers, and a coffee partners. We are passionate about bringing you the best quality coffee from the Northeast of India. We source coffee from the hilly terrain of Northeast India. But our work doesn’t stop there. 

We bring the coffee to our own facility here in Shillong for further processing, we strive to maintain quality and freshness

How do we do that? Here are some of the steps we take to achieve processing perfection:

Step 1: Moisture Testing and Drying

The first step is to test the moisture content of the coffee beans which we receive from the famers. The ideal moisture content for coffee beans is between 10% and 12%. If the moisture content is correct, we store the beans in a storage room with controlled temperature and humidity. If the moisture content is high, we send the beans for drying in our processing unit. Drying is a process of removing excess moisture from the coffee beans by exposing them to sun or hot air.

Step 2: Hulling 

The next step is to remove the outer layer of the coffee beans, called the parchment or the husk.  We use a machine called a huller, which has rotating discs or blades that break the parchment or the husk and separate it from the beans. We hull the beans twice to ensure that all the husk is removed.

Step 3: Gravity Separator 

This machine uses gravity and air to sort the beans by density. The heavier beans fall to the bottom, while the lighter beans are blown to the top. This way, we can remove any foreign material, such as stones, sticks, or metal, from the beans.

Step 4: Grading 

This machine uses screens or sieves to sort the beans by size. The screens or sieves have different sizes of holes, and the beans pass through them according to their size. This way, we can classify the beans into different grades, such as AA, AB, or C.

After grading is completed, we store the green bean. Storage is important to preserve the freshness and flavor of the coffee beans. We store the beans in a cool and dry place, away from direct sunlight and moisture. We also store the beans based on their size and region of origin, to avoid mixing different varieties of coffee.

Step 5:  Roasting 

This is the most crucial stage, we use PROBAT 12, a cutting-edge roaster that enables us to adjust the temperature, time, and airflow of the roasting process. We offer different roast levels, such as light, medium, full city, dark and French roast. Our roaster is very meticulous about the roasting. After degassing, she would cup a coffee to evaluate the profile.

Step 5:  Color Sorter

After roasting, we use a colour sorter to remove any flawed beans after roasting. We also use the colour sorter to separate green beans when we have to deliver green bean orders.

We strive to ensure quality control. This is the final quality check before we pack and ship the coffee beans to you.
